Cabernet Sauvignon is the only varietal-wine we produce that isn't attributed to Italy. It is, however, widely planted in Italy. It also blends well with other Italian varietal wines, like Sangiovese. Most importantly, we just really like Cab from Paso. This Cabernet comes from the Carriage Vineyard in the new El Pomar AVA.

In the spectrum of Cabernet, this is a robust style.
The wine is true to Paso Robles - balanced and fruit forward but restrained in its ripeness and alcohol. High toned aromatics include black currant, cedar, and ripe berry pie. The palate is approachable for a cab of this age. It was aged in French oak for 18 months; 25% was new.
The tradition in Italy is to blend Cabernet with other varieties, and we do.
